Cut the leek in 2" long pieces, then cut those lengthwise at least 3 times to get thin strips.
Cut the scallions into rings and dice the onions. Chop the garlic finely.
Melt the butter in a pan and brown the vegetables in it for a couple of minutes.
Mix the remaining ingredients for the brains in a bowl (be careful not to get burned on the hot vegetables from the last step).
Divide the meat dough by 6 and form each piece into a rough brain shape to your liking.
Bake in the oven at 180°C (convection) for 45 minutes.
In the meantime melt the remaining butter in a pot and stir in the flour.
Then add the milk and keep stirring vigurously while heating the sauce up until it thickens.
Take it off the stove and add salt and pepper to taste.
After half the baking time, use a brush or the back of a spoon to spread the sauce over the brains. Repeat that every 5-10 minutes.
Rice goes well with these brains.
If you want additional sauces, they should be red (and yes, ketchup works).
And for more brainpower add 100 g cheese (your choice), dice it and add it to the dough.
